Cajun Chocolate Cake
Recepie Ingredients:
2 cups sugar
1/2 cup buttermilk
2 cups flour
1 tsp soda
1 tsp vanilla
1 stick oleo, margarine or butter
4 tbsp cocoa
1/2 cup shortening
1 cup water
Icing
1 stick oleo margarine or butter
4 tbsp cocoa
1/2 cup milk
1 box powdered sugar
1 cup pecans
1 tsp vanilla

Directions:
In a large mixing bowl mix 2 cups sugar and 2 cups flour. In a sauce pan bring to a boil 1 stick oleo, 4 T cocoa, 1/2 cup shortening and 1 cup water. Pour over dry ingredients. Add: 2 eggs, 1 tsp soda, 1/2 cup buttermilk and 1 tsp vanilla. Mix well and bake in a well greased oblong pan for 25 minutes at 400 or until toothpick comes out clean.
Start 5 minutes before cake is done.
Mix 1 stick oleo, 4 T cocoa, 1/2 cup milk and bring to a boil. Add 1 box confectioners sugar, 1 tsp vanilla, and 1 cup pecans(chopped if wanted) Pour over cake.

Chocolate Fondue

Recepie Ingredients:
12 oz. semisweet chocolate
1 c. whipping cream
2 T. of Kahlua or brandy

Directions:
Break up the chocolate and place in the fondue pot. Add whipping cream and heat slowly, stirring constantly, until chocolate melts. Stir in the Kahlua or brandy. Place on low heat and dip! Serve with strawberries, peaches, blackberries, raspberries, pound cake, or ladyfingers.
If you don’t have a fondue pot, you can still do this using a double boiler. Put a pot of hot water on the stove. When it comes to a boil, reduce the heat and put a metal mixing bowl over it. Follow the same directions as above. Serve immediately in a heat safe bowl. Serves 8 – 10.
